- 3 cups diced and cooked boneless skinless chicken breasts
- 1 cup diced and cooked celery
- 1⁄2 cup toasted almond
- 2 tablespoons chopped onions
- 1 1⁄2 cups cooked rice
- 3⁄4 cup mayonnaise
- 1⁄4 cup chicken broth
- 1 can cream of chicken soup
- 1 tablespoon lemon juice
- 3 hard-boiled eggs, sliced
- 2 cups crushed potato chips
directions
- Cook chicken in a skillet until the juices run clear.
- Add celery and onion and cook together for 3 minutes once chicken is done.
- In a mixing bowl add all the ingredients, including chicken and celery, together and mix well.
- Put mixture in a buttered baking dish and cover with crushed potato chips.
- Bake at 350 degrees for 20 minutes.

I doubled the recipe for a buffet dinner. I omitted the eggs and added less rice , just because i was serving devilled eggs and a rice salad alongside.The only problem i had was that i didnt make more, as My sons college friends devoured the whole lot and left me with no leftovers for the next day. A great recipe to entertain a crowd, this is a keeper.

I chose this recipe for PAC 'o6 because it is similar to a recipe that my Mom used to make often when we were growing up and she lost the recipe and we always loved it. I made the recipe as posted except I left out the eggs (personal preference). Thanks for bringing back happy memories with this recipe! I am sure we'll make it often.
