ingredients
- 10 lbs course ground pork butt
- 12 -15 tablespoons chili powder, made from chili pods. mild med and hot
- 5 tablespoons paprika
- 4 tablespoons cumin seeds, and roasted and ground
- 4 tablespoons kosher salt
- 2 tablespoons coriander
- 3 tablespoons oregano
- 2 tablespoons red pepper flakes
- 1⁄2 teaspoon ground cloves
- 1⁄4 teaspoon ground cinnamon
- 3 tablespoons garlic powder
- 1 1⁄2 tablespoons ground black pepper
- 1⁄2 cup cider vinegar
- 1 1⁄2 cups icy water
directions
- Combine dry ingredients and add to ground pork then while mixing add in vinegar and water. Let sit overnight in fridge so spices can meld. Do a final taste and tweak spices if needed.
- Stuff into hog casings or package for bulk.
