Hobo Stew

"I've made this dish for several years, it came from one of my 5-ingredient-or-less cookbooks. Even my picky-eater kids (and DH!) like it. It has a bit of a spicy kick so you could use plain diced tomatoes instead of tomatoes with chiles if you prefer a milder taste. I'm posting it here for safe keeping."

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 (10 3/4 ounce) cans minestrone soup
  • 2 (15 ounce) cans ranch style beans
  • 1 (10 ounce) can tomatoes, with chiles

directions

  • Brown ground beef and onion together; drain.
  • Combine all ingredients in a slow cooker; heat on low for 8-10 hours stirring occasionally.
  • *Note: I've used both condensed minestrone soup and non-condensed (like Progresso). If using condensed I add about 1 soup can of water.

  1. This is a wonderful quick supper soup - I love to make it with cornbread on a cold night. No need to do a crockpot - cooks well on top of the stove in about 30 min.
