Green 'n' Gold Egg Bake

- 1 cup seasoned bread crumbs
- 2 (10 ounce) packages frozen chopped spinach, thawed & squeezed dry
- 3 cups small curd cottage cheese
- 1⁄2 cup parmesan cheese or 1/2 cup romano cheese, grated
- 5 eggs
directions
- Preheat oven to 350*F.
- Sprinkle 1/4 cup bread crumbs into a well greased 8 inch square baking dish.
- Bake for 3-5 minutes until golden brown.
- Remove from oven.
- In a bowl, combine the spinach, cottage cheese, Romano cheese, three eggs and remaining bread crumbs.
- Spread spinach mixture over the baked bread crumbs
- Beat remaining eggs and pour over the spinach mixture
- Bake, uncovered, for 45 minutes or until a knife inserted near the center comes out clean.
- Let stand 5-10 minutes before serving.
