Glazed Pearl Onions

ingredients
- 2 lbs white pearl onions
- 3 tablespoons margarine or 3 tablespoons butter
- 2 tablespoons currant jelly
- 2 teaspoons sugar
- 1⁄4 teaspoon salt
directions
- In deep 12-inch skillet over high heat, heat 1 inch water to boiling.
- Add onions; heat to boiling.
- Boil 1 minute; drain.
- Peel onions, leaving a little of the root ends to help hold shape during cooking.
- In same skillet over high heat, heat 1 inch water to boiling.
- Add onions; heat to boiling.
- Reduce heat to Low; cover and simmer 5 to 10 minutes until onions are tender; drain.
- Wipe skillet dry.
- In same skillet over high heat, cook onions, margarine or butter, currant jelly, sugar, and salt, stirring occasionally, until onions are browned and glazed, about 10 minutes.

A lovely recipe that we really enjoyed. I cut out the sugar and used Apple Jalapeno jelly - They looked attractive and tasted wonderful. I will be making this recipe again. 5 Dec 09 I made the recipe again using red pearl onions and again used Jalapeno jelly - Wonderful, I only boiled the onions for about 3 minutes and then when I glazed them had the heat fairly low and cooked them for about 5 more minutes shaking the pan frequently. Love this recipe - I will make it with current Jelly I promiseReply
