i used the recipe as written..my walnut oil was from france & very strong, too strong, i tweaked it per below..then converted it to make a month supply..so: 1 C oil (2nd time i made it i only used 1/4 C. walnut oil & 3/4 C evoo 1/4 C b. vinegar 4 t. mustard salt & white pepper to taste have had it plain & have topped with 1/2 C chopped baked nuts &/or 1/2 C dried fruit (figs, cherries, cranberries, etc) best so far with a kale/arugula salad..but really very tasty w/ every salad I've used this dressing with!
Very nice with sweetness from the balsamic vinegar mellowed by walnut highlights. This vinaigrette would be best tossed into the salad as its bottle presentation is not as pretty as some salad dressings. With this dressing, guests will say "the salad tastes delicious", rather than "I love the salad dressing". Made for Summer Photo Tag.
