Florentine Lemon Turkey Loaf

"This a great light recipe that I found on a ground turkey website. I modified the ingredients to add some more lemon flavor."

  • In a medium bowl combine all the ingredients.
  • Mix gently.
  • Place into a 9" by 5" loaf-sized baking pan.
  • Pat down gently.
  • Bake at 350 for 60 minutes or until no longer pink in the center.
  • Let stand 10 minutes.
  • Slice and serve.

  1. This was quite a nice change from the typical meatloaf! It didn't say whether to cover it, but now I'm thinking I should have. It turned out a tad dry, but then again, I used extra ground turkey. I also used red onions which made the end result kinda pretty, with the green spinach and light red onion showing through. Thanks so much for a nice new addition to my family's diet.
     
  2. This was really yummy. Very moist. DH said it needed a little salt (I didn't add the salt). My toddler wouldn't eat it, but what does she know. ;) I think I'm going to make a cream sauce with the leftovers and serve it over pasta. Thanks for sharing! :)
     
  3. We really enjoyed this turkey loaf. The spinach gives a really nice flavor with just a hint of the lemon coming through. Overall a delicious savory dish that is simple to prepare.
