Finnish Coffee Bread (Breadmaker Recipe)

- Put all the ingredients in the bread machine on the dough setting, in the order specified for your machine.
- When the dough cycle completes, remove, divide in half and then split each part into 3 equal pieces.
- Roll into long strands (18" long), and braid strands into 2 loaves.
- Put loaves on greased cookie sheets.
- Let rise until doubled in size (30 minutes). Brush with second egg and sprinkle with sugar.
- Bake at 375°F for 20-25 minutes or until golden brown.
- Immediately after taking them out of the oven, remove from pans. Cool on racks.

Erinomainen leipä koneistaa ohje! (Outstanding bread machine recipe! In Finnish.) Put both eggs in and later understood that the one egg was supposed to be reserved for Step 3. The dough is very sticky and next time would add 1/4 cup of lour. I did not do the sugar glaze as we love toast and this makes great toast. Thank you ellie for a keeper. Made for Unrulies Under the Influence during ZWT6.

Excellent recipe, I have made it several times. Just make sure you add only one egg into the breadmaker. I used 1.5 tsp ground cardamon. Also, I found it was better cooked aat a bit lower temp. Then what I did for the sweet topping is the 1/2 cup sugar to 1/2 cup water brushed on midway though cooking. I also like to sprinkle some coursely ground cardamon at that point(I just put some in a ziploc and wack it with a mallet). Pop it back in the oven for 5 min, then brush it with the sugar water again, and finish coooking it.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
