Fill-Me-Up Veggie Soup

ingredients
- 1 cup sliced carrot
- 1⁄2 cup diced onion
- 1 tablespoon minced garlic
- 3 cups fat free broth (I prefer Better-Than-Bullion to make broth)
- 3 cups diced green cabbage
- 1 cup green beans
- 1 can diced tomatoes
- 1⁄2 teaspoon dried basil
- 1⁄4 teaspoon dried oregano
- 1⁄4 teaspoon salt
directions
- Saute carrot, onion and garlic over low heat in a large saucepan sprayed with non-stick cooking spray.
- About 5 minutes.
- Add the rest of the ingredients and bring to boil.
- Lower heat and simmer, covered, until beans are tender.
- About 20 minutes.

I am just getting back to cooking, and trying to stick to whole grains and whole foods. I like to cook, but wasn't making the time for it. I prefer crockpot cooking because the majority of the work is done when I get home from work. I have a husband, two step daughters and 7 grandkids.
