Fast Pasta Sauce

From "Pacific Fresh" cookbook, an easy sauce for busy days. I've used it when making manicotti and of course, over plain pasta.

ingredients
- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 1 clove garlic, minced
- 1 (15 ounce) can diced tomatoes, pureed slightly
- 1 (8 ounce) can tomato sauce
- 1⁄2 teaspoon dried basil, crumbled
- 1⁄4 teaspoon dried oregano, crumbled
- 1 bay leaf
- 1⁄4 teaspoon sugar
- 1⁄4 teaspoon salt
- fresh ground pepper
directions
- In saucepan over medium heat, warm oil.
- Add onion and garlic; saute until soft.
- Add pureed tomatoes, tomato sauce, herbs, sugar, salt, and pepper.
- Simmer, uncovered, stirring occasionally 10- 15 minutes.

Like a previous reviewer said, this sauce is great for customizing to lower sodium diets. We are feeding ourselves as well as a 7 month old so we try to keep things low sodium for her and add salt to our own servings if desired. Made this with no salt added diced tomatoes and sauce and it came out great. I didn't have any fresh garlic so I added 1/4 to 1/2 tsp of garlic powder with the other spices. We also wilted a bunch of fresh spinach into the sauce for added veggies. Flavor was great both before and after the addition of the greens. Thanks for sharing!
