Easy Spanish Rice

So easy, so yummy, so authentic tasting! From my sister-in-law who is a fabulous Mexican cook. This rice is easy to multiply and hard to mess up. With so few ingredients and such great taste, it's a favorite.

ingredients
- 1 cup white rice
- 2 cups water
- 1 tablespoon olive oil
- 1⁄4 teaspoon cracked pepper (or preground pepper if you don't have whole pepper)
- 1 tomato-flavored bouillon cube (found in Mexican isle at grocery store, Knorr brand is best)
- 1⁄4 cup salsa (or pic de gallo or 1/4 tomato & 1/8 onion if you don't have salsa)
directions
- In a medium size sauce pan, place olive oil, pepper and tomato bullion.
- Simmer until bullion dissolves.
- Add rice.
- Add water.
- Add salsa (or tomatoes and onion).
- Sprinkle a tiny bit more pepper.
- Stir together.
- Cover and simmer for 20 minutes as you would regular rice.
- Fluff and serve.

This is such a nice tasting, easy to make dish, & I followed your recipe though I did use my own posted pico de gallo recipe! I do enjoy just plain ol' rice, whether white or brown, but it's great to be able to dress it up now & then, as your recipe does! Thanks for sharing it!
