- 5 lbs potatoes, washed and peeled
- 1⁄4 cup butter
- 1⁄4 cup milk (or as much as needed to make creamy mashed potatoes)
- 2 lbs ground beef
- 1 onion, peeled and chopped
- 1 cup mixed vegetables
- 1 cup ketchup
- 1 tablespoon liquid smoke
- 1⁄8 cup Worcestershire sauce
- 2 cups cheddar cheese
- salt
- pepper
- garlic powder
directions
- Cut the potatoes in chunks and boil until tender; reserve half of the chunks and mash the rest with a little butter and milk.
- while the potatoes are cooking, cook ground beef and onions over medium-medium high heat.
- when the meat is cooked, drain the fat.
- add the liquid smoke, worcestershire sauce, salt, pepper and garlic powder (to taste).
- take some of the potato chunks and make a bed of them in a buttered casserole dish.
- spread the ground beef mixture over the top of the potatoes.
- Spread mashed potatoes on top of the ground beef.
- cover with cheese and sprinkle with parsley flakes; bake for 10 minutes.
