ingredients
- 1 cup peanut butter
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
directions
- Preheat to 350.
- Combine all ingredients and mix well.
- Spoon on foil lined cookie sheet and flaten.
- Bake for 8 to 10 minutes.

Made these 1 Sunday when I didn't feel like going to grocery store for anything to make cookies -- I would have to say this is the best peanut butter cookie we have ever had! Loved them and make them frequently. At the end (after baking) I sprinkle just a smidge of granulated sugar on top. Thanks for posting!

I don't usually like PB cookies, and I don't often bake them either, but I promised my 4 year old we'd make cookies, sooo we picked the easiest recipe we could find. (With the stuff I had on hand.) I can't stay out of them, and my other kiddos won't get any at this rate! This was a dry, dense, crumbly, slightly chewy cookie with fantastic PB flavor. I used all natural PB (the kind without corn syrup or sugar added.) I think regular PB would yield a smoother, moister cookie. We doubled the recipe and got about 3 dozen--too many got eaten before I could get an accurate count. :) I subbed 1/2 brown sugar and 1/2 splenda for the sugar. I think that's why they turned out a bit chewy. This was a fantastically simple recipe, great to let kids help with--if you can keep them from eating all the dough.
