No Flour Peanut Butter Cookies

"I found the recipe itself on the net about two years ago. To my taste it is very sweet cookie, but it is an an easy cookie to make and quick.I make this in a two in one by halving the dough and adding chocolate or peanut butter chips to one half."

  • Preheat oven to 350 degrees F.
  • Prepare baking sheets with parchment paper.
  • In a medium bowl mix the peanut butter and the sugar until smooth.
  • Add the eggs one at a time, then add the baking soda, salt and the vanilla essence.
  • Roll dough into walnut size balls, place on the baking sheet giving them room to spread, press down slightly with a wet fork.
  • Bake for 8 to ten minutes, remove from the oven and leave them on the baking sheet to cool for a few minutes, they will be very soft at this stage, then remove to a wire rack to cool completely.
  • Depending on your walnut size it should make 36 cookies.

  1. I cut the recipe in half only using 1/4 t. baking soda and baked at 365 degrees for 13 minutes. Changes are for high altitude. Hubby loved them. Thank you.

  2. Great cookies! I only made a half batch and used splenda in place of the sugar, and they came out perfect. I made mine quite large and got 10 cookies out of the 1/2 batch. The flavor is yummy and I would definately make these again. Made for Cook-a-thon for Pets'R'us.

Tweaks

  1. 2 handfuls of chocolate chips
     
  2. Instead of 2 cups of white sugar, I did 1 cup white sugar, and then 1/2 cup of brown sugar. I also added 2 tsp of vanilla extract instead of 1. With adding brown sugar you get more of a chewy cookie than a crunchy one. They came out awesome. I wanted to reduce the sugar to 1/2 white and 1/2 brown but I wasn't sure if it would be sweet enough, then again, I prefer more of a peanut buttery cookie than a sweet one.

  3. Skippy honey peanut butter. 1/2 cup applesauce instead of eggs. Replaced 1/2 cup white sugar with brown sugar and sprinkled top with a little sea salt. Thanks to original recipe! Would have never guessed I could make a cookie without flour!

Hello, my name is Bonnie and I am a very beautiful cat as you can see if you look at the picture at the top of this page.... What??.. I am supposed to talk about you??? But it says here: About Me!! Well all right then ...... My mom is Dutch and has moved to England in October 2007, after living 15 years in the Netherlands with my English dad. They don’t have any human children and “created” their own family, which means I have to share them with Hannah, she is a 6 years old tortie cat, Abby the dog, she is a 9 year old Beagle, and a one year old black Miniature Pincher named Poppy, I refuse to tell you my age but I am a georgious lilac British Shorthair cat!! It is obvious she adores pets just by looking at her name she uses on Zaar (many on Zaar call her Pets or Petsie Poo), her name in real life is Annelies and that is a common Dutch name. My mom always liked to cook, but since she joined Zaar it got out of control, and it doesn’t help that she is disorganized. Printed recipes everywhere in the house, the recipe binders have got bigger and just between you and me, her hips too!!! I have lived in Holland all of my life until now, but they lived in several different countries/places:- desert and coastal Oman, up North and West in Holland, Vancouver-Canada, Aberdeen- Scotland and in Norway they lived in Bergen and Oslo. We have all moved together to England, as you can see I’ve already learnt the language! I heard her say to Dad that this is the last time she moved to another country...she's had it with moving from one place to another! ( its her age...she's getting grumpy) Mom is 55 years old but I always hear her say that the date of her birthday does not mean that much to her, the date of her cancer anniversary is more important, because so far she is a survivor. Besides cooking she has other interests too, crafts, gardening and soap making. She likes Zaar and is one of the hosts on the German-Benelux Forum here on RecipeZaar.
