Easy Indoor Fajitas

"I live in San Antonio, TX we have alot of good mexican food but I can't always eat out. This is another one of my "recipes", I hesitate to call it that because its too easy. This turns out really good though and the whole house smells nice, good alternative when you can't fire up the grill (we live in an apartment). When I get home from work I can put this together in just a few minutes. I generally pick up tortillas from a drive through place (Taco Cabana's are too good not to) on my way home from work. When my husband arrives home and smells this he sits straight down at the table."

  • Heat just a tad bit of oil in the frying pan and throw in the sliced onions and bell peppers let them start to cook.
  • Throw in the sliced chicken breasts then sprinkle everything with 1/2 packet of any taco seasoning.
  • Cook until onions are translucent and chicken is cooked through.
  • Dish into tortillas with sliced avacado, beans ( I like the ranch style beans from a can), cheese, lettuce, tomatos, whatever you like.

I am not your 'tipical' wife but then again who is right? I work all day and am working on graduate school at night. I have lived all over the world so I appreciate trying new recipees although I admit I am a stickler for my favorites. If I do find the time to cook It has to be yummy and it better be good! :)
