Easy Churro Cheesecake

"My daughter found this recipe somewhere and it's incredible! I will put the recipe in as she makes it, but the filling is essentially a double filling. You can make it with half the filling, but it's only half as good. ;-)"

  • Cinnamon Sugar Mixture:

  • Combine 1/2 cup sugar and 2 tablespoons cinnamon in a small bowl and set aside.
  • Filling:

  • With a hand mixer, beat the 4 bricks of softened cream cheese until smooth. Add 1 cup sugar, 2 eggs, 2 teaspoons vanilla and beat until smooth and creamy. Set aside.
  • Assembly:

  • Spray a 9x13 pan with non-stick spray and sprinkle half of the cinnamon/sugar mix evenly in the bottom of the pan.
  • Unroll the dough and carefully place into the pan on top of the cinnamon/sugar mix. Squish or fold the edges of the dough to make it fit in the pan.
  • Spread the cream cheese mix evenly over the dough.
  • Unroll the second can of dough and place on top of the filling.
  • Sprinkle the remaining cinnamon/sugar mix on top of the dough and bake at 350 degrees for about 30 minutes or until light brown.
  • Let it cool before covering and placing in the fridge to fully set.
