Easy Cheesy-Corny Muffins

"This is a quick recipe that is adaptable to any ingredients you wish to throw in the bowl. Some suggestions would be green peppers, red peppers, onions, bacon bits, jalapenos, etc. And just use whatever type of cheese you like! They freeze well and make good mini muffins for a buffet table."

  • 1 package corn muffin mix (I use Martha White)
  • 1 egg
  • 12 cup grated cheese
  • 12 cup creamed corn
  • 14 cup milk

directions

  • Mix all ingredients til smooth.
  • Put in a greased or paper lined muffin pan.
  • Bake at 400 degrees for 15-20 minutes til golden brown.

  1. very delicious! i made mine with jiffy corn muffin mix and a whole cup of grated sharp cheddar. i also added about a tbsp. of dijon mustard to the mix because i like things with a little savory kick. delicious and so easy. i'll be making these again.
     
  2. I did add some extra cheese to this and the muffins were great. Easy to do but the problem is they don't last long!!!
     
  3. These are very good and easy! I could not taste the cheese flavor, so next time I made add a little more or sprinkle some over them during the last minute or so of cooking. They cook to a beautiful golden yellow color. I think bacon and onion would be so delicious in them! Thanks Junebug! I love easy and good recipes!
