Double Apple Salad
"I am pretty sure this was a TOH recipe. I've had it for a very long time so don't remember. I love apples in salads and have enjoyed taking this one to a church potluck! I didn't bring any home."

ingredients
- 1 large golden delicious apple, diced
- 1 large Red Delicious apple, diced
- 1 teaspoon lemon juice
- 1 (20 ounce) can pineapple chunks, drained
- 1 cup miniature marshmallow
- 2⁄3 cup flaked coconut
- 1⁄2 cup chopped walnuts
- 1⁄4 cup raisins
- 1⁄4 cup mayonnaise
- 2 tablespoons thinly sliced celery
directions
- In a bowl, toss apples with lemon juice.
- Add remaining ingredients and mix well.
- Cover and chill for at least 1 hour.

You may call it a salad but I call it dessert and delicious and down right yummy. Everyone throughly enjoyed it and asked for it to be put on the regular menu often. Thanks so much for posting such an easy dish to throw together and for it to taste so good too. -

This was a wonderful refreshing salad. Only thing I changed was I cut it in half (only two of us) and I left out the coconut (I hate it) Otherwise followed all the ingredients and it turned out great. Will make again soon.

<p>I live on the Oregon Coast with husband and four boys. I am able to stay at home with them and hold down the fort. I have many cookbooks which I enjoy searching through for our family favorites. I recently started working as a home health care worker for seniors with disabilities (which I absolutely love), I love to quilt, crochet, bake, read, garden, watch the rain (which happens quite frequently here) and play with my kids. <br /><br />I am passionate about canning, canning, canning. I will admit I like admiring all the hard work after the jars are placed on the shelves. hehee I am all for if I can make it myself I will. Yes...I am frugal. I also love to bake. Especially homemade bread. I will continue to do so until arthritis takes over my hands. Then I will use more of the mixer for the kneading part. <br />All recipes I post are ones I've made and are our famiy favorites. <br /><br />I love pretty flowers. These flowers grace our yard every year.
