- 1⁄2 teaspoon red pepper flakes
- 1⁄2 teaspoon salt
- 1 teaspoon black pepper
- 1 1⁄4 teaspoons paprika
- 1 teaspoon dry mustard
- 1 teaspoon cumin
- 1⁄2 teaspoon thyme
- 1⁄2 teaspoon oregano
- 2 whole bay leaves
- 3 links mild Italian sausage
- 1 whole onion, chopped
- 2 celery ribs, chopped
- 2 garlic cloves, minced
- 2 tablespoons butter
- 2 cups chicken stock
- 3⁄4 cup uncooked rice
directions
- Combine seasoning mix and set aside.
- Preheat a large skillet for a few minutes. Cook sausage and bay leaves until sausage is browned. Chop onion, celery and garlic.
- After sausage has browned stir in seasoning mix, onion, celery and garlic. Add butter and stir until melted. Reduce heat to medium and cook for 8 minutes, stirring constantly.
- Add stock and cook 8 minutes on high. Add rice, cover and cook on low for 15 minutes.
- Remove bay leaves and serve.
