Delicious Cannellini Beans

"This is the most affordable and tastiest dish. It could be a good side dish maybe with an Italian-inspired fish, but I like a bowlful of it as a meal itself. Warm, hearty and flavorful- did I mention cheap and easy too? :)"

  • Drain and rinse beans.
  • Put into a saucepan and add just enough water to cover the beans.
  • Add pepper and thyme to saucepan.
  • Bring to a boil on med-high heat, and when it boils, reduce heat to medium.
  • Continue boiling, stirring frequently until water is almost fully evaporated.
  • Stir in the garlic and olive oil, cook until water is gone, approximately 3 more minutes.
  • Serve.

  1. I've got a confession to make...I love beans! They're just so inexpensive and so tasty! This recipe is simple, but the flavor is absolutely amazing! The minced garlic blends with the creamy sauce from the beans and it's just heavenly! I ate the beans by themselves the first night for dinner, and over brown rice for lunch the next day. Both ways were great! Thanks, MrsMM!
     
  2. Sorry but this recipe was just ok at my house. Did not look to appealing to my DH or daughter. They did try it but did not finish. I thought it was ok but lacking in taste. Maybe with some tweaking with more spices would have been better for us.

  4. This is a really delicious way to make white beans as a dish.I didn't drain the beans, just heated them in their can liquid.And instead of thyme I used the same amount of oregano. It is amazing how creamy the olive oil makes the beans taste.You could also saute either fresh spinach or escarole minus the bitter white part in olive oil and toss the beans and greens together at the last minute.Served with a crusty bread to dip in the bean broth and you have an economical and tasty main dish or side, depending on your preference.Thanks for submitting this one. A definite keeper.
