- 4 large potatoes (sweet or regular)
- 1 onion, chopped
- 3 tablespoons oil
- 1⁄2 tablespoon curry powder
- 1⁄2 teaspoon turmeric
- 1⁄2 teaspoon chili powder
- 1⁄2 cup cashews (roasted if raw)
- 1 cup vegetable broth
- 2⁄3 cup coconut milk
- salt and pepper
- 2 teaspoons cornstarch
- 2 teaspoons dry sherry
directions
- Boil potatoes.
- In a pot, saute onion until translucent.
- Add all spices to the pot with the onion, stir, then add cashews and potatoes.
- Stir in broth and coconut milk.
- Mix cornstarch, and sherry (or broth, juice or water) in a cup. Add a bit of hot broth to the cornstarch mix then stir everything in the pot.
- Heat through while stirring.
