I doubled this recipe for a St. Patrick's Day luncheon, and 20 people cleaned out the entire crockpot. I didn't want to just mix all the ingredients together (thinking it wouldn't look very appealing), so I layered the sauerkraut on the bottom, then the beef, then the cheese-dressing mixture on top. I'm not sure whether it looked much different, but the sauerkraut cooked and softened nicely on the bottom layer. Very, very good!

I really enjoyed this-- it was such a unique theme-- I brought it to my work for a Dip Off and it was a huge hit! This is a definite keeper!!

I didn't think I'd like this but it was soooo good. We had a German themed lunch and this was the biggest hit of the day!

So easy - and everyone just raved and wanted the recipe. Best part was I used one of the new crockpot liners so all I had to do was lift out liner and just rinse out crock. I had a uncooked corned beef brisket in freeze - thawed and cooked in the crockpot covered with cider (will never use water to cook a corned beef again) but you can use deli or packaged corned beef. I used both miniature rye and pumpernickel. Will definitely add to my favorites for potlucks.
