Crock Pot Barbecued Beef and Bean Soup

ingredients
- 1 lb dried great northern beans, soaked
- 2 teaspoons salt
- 1 medium onion, chopped
- 1⁄8 teaspoon ground pepper
- 2 lbs short rib of beef
- 6 cups water
- 3⁄4 cup barbecue sauce
directions
- Place all ingredients in the crock pot except for the barbecue sauce.
- Cover and cook on Low 10 to 16 hours.
- Before serving, remove short ribs and cut the meat from the bones.
- Return the meat to the crock pot.
- Stir in the barbecue sauce before serving.

I've made this twice, and have been very happy with the results. It's so easy, and my family likes it even though they don't usually care for beans. I added close to 1 1/2 c. barbeque sauce last time and it was great--I'd say different brands will affect the taste differently and you should add a bit at a time until you get the taste you like. This last time I also roasted the ribs separately and took the meat off the bone before adding to the beans at the beginning of their cooking time--I didn't like how greasy they were when the fat from the ribs cooked into the beans. Otherwise great comfort food!

This is easy and delicious - the meat was soooo tender and I just used some beef stew meat I had in the freezer. We loved the addition of the BBQ sauce at the end of cooking. I used cheap-old Open Pit and it worked great. You could use your own home made if you wanted to. I cooked this on low for about 12 hours and then served with cornbread. Thanks, Mirj!

I'm married to a brilliant man with the most yummy British accent (this is the part where he rolls his eyes and says, Yeah, yeah, yeah). We're the Brady Bunch on speed. Not all eight live with us, but everyone is in and out all of the time, so we're thinking about replacing our front door with one of those revolving thingies.</p>
