- In a large saucepan, sauté onion in butter.
- Add flour and cook slowly for 2-3 minutes, stirring constantly.
- Add the chicken stock and bring to a boil.
- Add the cauliflower, potato, nutmeg, paprika, salt and pepper.
- Reduce heat to a simmer, cover and cook until vegetables are tender.
- Remove from heat and blend until smooth.
- Add the cream. Heat through and serve.

My first attempt at cauliflower soup and I most pleased! I had to use up half a head of cauliflower so I made your soup but for 4 servings. It is delicious and didn't change anything. I'm just not too sure about the paprika and will make it without it the next time. Thanks for sharing an easy and tasty soup!!

Awesome cauliflower soup! I made this as written. I had a big head of cauliflower. I think if using a small cauliflower, the stock amount she be a little less. It may seem that the nutmeg and paprika amounts are a bit much, but it really works without being overpowering. Great soup that I'll make again. Thanx!

Thank you for a lovely recipe. I also fed it to 'non-cauliflower' people and it was pronounced a great success! I substituted low fat evaporated milk instead of the double cream and I used a spray of olive oil instead of the butter. This took the fat and cholesterol down substantially and I honestly believe the taste is not affected. Why don't you try my similar Curried Broccoli Soup recipe #246304. Thanks again, Scott
