Cold Spinach Dip

"I found this recipe on a box of Mrs. Grass Recipe, Soup & Dip Mix, made by Wyler's. I like to add artichokes to fit my liking. I like cold and hot spinach dip. This recipe is meant to be cold but it could probably be good served warm too, heat in the oven till bubbly."

  • Allow cream cheese to warm to room temperature so it mixes easier with other ingredients.
  • Thaw, drain and squeeze dry spinach.
  • Chop green onions and artichokes hearts.
  • Combine cream cheese, sour cream, mayonnaise, vegetable soup mix, cream cheese, parmesan cheese, and onions (and artichoke hearts if desired). Chill for at least two hours.
  • Serve with bread cubes or crackers. I like mine cold with vegetable flavor crackers.

  1. This was fantastic for a hot summer day. I accidentally forgot the green onions and Parmesan, but it didn't seem to need them. I will try them next time though! I also switched out the vegetable soup mix for a packet of Uncle Dan's ranch dressing mix, as I am not fond of the former. We loved it and it's a great way to mix it up if you make this often. This is so simple to make if you have a blender or a food processor too - dump, mix and you're done! We loved ours served with veggies and whole wheat pita chips. Thanks so much for the recipe, we'll be back to this one often I think.

I was born, raised, and still live out in the country by Oshkosh, WI. Yes, Oshkosh B'Gosh and also home of the EAA AirVenture. You can see one of the runways from our backyard. Mother of a one year old boy, three cats, one dog, and several fresh and salt water fish (including seahorses). Very happily married for two years. I love to cook for others and myself, crochet, knit, having campfires in the backyard, reading (especially books by Louis L'Amour), gardening, going to Walt Disney World, and spending time with family and close friends. We went on a Disney cruise on the Wonder, September of 2006 and it was great! We are going again this year in September (2008) or to Walt Disney World. In 2012 we will visit Disneyland, and maybe we will see Tokyo or Paris Disney sometime. My husband has been an EMT, firefighter, and a Sheriffs deputy; hence my public name: Mrs. Meduck (medic). He has a very limited list of foods that he will eat. He says he is just selective. It's very hard and pretty much impossible to find something new and different to cook that he will like. He doesn't like ANY spices unless you count ketchup as a spice. I am hoping our son isn't as "selective" when he gets older. I work for a retail chain called Mill's Fleet Farm, in the Hardware/Paint department. I have also worked in the Sporting Goods dept., the Auto Service Center (writing work orders & working on cars), and in Loss Prevention. My husband has shown me how to work the digital camera and now my new passion is finding recipes I like and posting photos if there isn't any posted yet.
