Coffee 'n Cream Dreams

"Easy drop cookie recipe with instant coffee for a more grown-up flavor. From Domino Sugar. They can also be drizzled with melted white or dark chocolate."

ingredients

• 1⁄2 cup butter, softened
• 1⁄2 cup sugar
• 1⁄4 cup firmly packed dark brown sugar
• 1 egg
• 2 teaspoons vanilla
• 1 tablespoon instant coffee granules
• 3 tablespoons hot water
• 1 1⁄4 cups all-purpose flour
• 1⁄2 teaspoon baking soda

directions

1. Preheat oven to 375°F Grease baking sheet.
2. Beat butter and sugars in large bowl until light and fluffy. Add egg and vanilla; mix well. In small bowl, combine instant coffee and hot water. Add to creamed mixture. Add flour and baking soda, beating at low speed until well mixed.
3. Drop by teaspoonfuls onto prepared baking sheet. Bake 8-10 minutes or until light golden brown. Cool on wire rack.
