Cinnamon Chocolate Cake

  • In a large bowl, sift together flour, sugar, baking soda, cinnamon and salt.
  • Stir in marshmallows.
  • Set aside.
  • In a small saucepan, bring the cocoa, cola, oil and butter to a boil.
  • Pour over flour mixture.
  • Mix well.
  • Stir in eggs, buttermilk and vanilla.
  • Pour into a greased 9x13 inch baking pan.
  • Bake at 350 degrees for 35-40 minutes.
  • Do not overbake.
  • Cool.
  • Frosting:.
  • In a large saucepan, bring the cocoa, cola and butter to a boil.
  • Remove from the heat.
  • Stir in powdered sugar and 3/4 cup pecans until blended.
  • Spread over cake.
  • sprinkle with remaining pecans.
  • Cool until frosting is set before cutting.

  1. CB - this is a very rich tasting dessert for sure! The cola allows the cake to remain very moist. The only thing that was a bit quirky were the marshmallows - they seemed to remain at the top of the cake and left it almost too moist in that area (maybe it was due to the pan I used?). I did make this in a bundt pan instead of the 9x13 and just sprinkled with powdered sugar as I am trying to save a few calories for the family on desserts. I bet that frosting is divine though! Overall the taste GREAT and nicely chocolatey!! Made for Holiday Tag.
