This is the end result of me deciding to combine about 5 recipes. It is a very interesting bread, very soft on the inside with a nice "crunchy" crust. I love it smothered in butter

ingredients
- 2 cups plain flour
- 1 cup sugar (white)
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1 1⁄2 teaspoons cinnamon (add to your own taste, I personally add closer to a full Table spoon)
- 1 teaspoon salt (optional)
- 1 cup milk
- 1⁄4 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla
- 2 tablespoons butter
- 1 tablespoon cinnamon

Add in suggestions
- 1 cup raisins (other dried fruit)
- 1 cup nuts, of choice
directions
- Combine dry ingredients and set aside.
- Mix oil, milk, eggs and vanilla.
- Add wet mix to the dry mix.
- Mix until JUST combined, if batter is lumpy that is FINE.
- Cut up butter and toss with cinnamon.
- Fold butter into batter.
- If adding something in do at this point.
- Pour into your baking vassal, (I use an old corny ware dish, a deep 9x9 should be fine).
- Bake at 350 for 45 or until the tooth pick comes out clean.

OMGoodness! This is an awesome 'bread' recipe! I followed as written, adding about 1/2 c. chopped walnuts, to taste. I used a glass loaf pan, so reduced temperature by 25 degrees and baked for 18 minutes longer. I also froze my chopped butter, before coating with cinnamon, and dumped what didn't stick to butter. This is scrumptious. Light and crusty and tasty! I will share with others, as it is a simple recipe. Thanks for sharing, Lady Morrigan ~ Made for Fall PAC '09.Reply
