DIRECTIONS

  • In medium saucepan, cook quinoa in broth. Fluff with a fork and transfer to a bowl.
  • Meanwhile, in a blender, combine garlic, ginger, cilantro, lime juice and oil. Pulse until smooth.
  • Add to quinoa, tossing with a fork to combine. Season to taste with salt and pepper.
