Chocolate Chip Banana Bread

- 3 over ripe bananas
- 1 egg
- 3⁄4 cup white sugar or 3/4 cup sugar substitute
- 1 teaspoon baking soda, dissolved in
- 30 ml water
- 1⁄2 cup margarine
- 2 cups flour
- 1 cup chocolate chips
directions
- Spray loaf pan with Pam or other non stick spray.
- Mash bananas with fork. You want a few lumps. Beat in egg and sugar until creamy with a few banana chuncks.
- Dissolve baking soda in water and add to banana mixture.
- Melt margarine. Allow to cool.
- Add flour and margarine to banana mixture. Stir. Add 1 cup of chocolate chips and mix until evenly distributed. Pour into loaf pan.
- Bake at 350 F for 45 minutes.
