  • 2 cups flour
  • 12 cup sugar
  • 1 tablespoon baking powder
  • 12 teaspoon salt
  • 1 tablespoon lemon zest, grated
  • 34 cup semi-sweet chocolate chips, miniature
  • 1 cup cherries, pitted and chopped (about 22)
  • 12 cup almonds, slivered and blanched
  • 1 cup milk
  • 13 cup oil
  • 13 cup butter, melted and cooled
  • 1 egg, beaten lightly

  • In a bowl, sift together the flour, sugar, BP and salt.
  • Stir in the zest, chips and almonds.
  • Combine the mixture well and stir in the chopped cherries.
  • In a small bowl, whisk together the milk, oil, butter and egg.
  • Add this to the flour mixture.
  • Stir until batter is just combined.
  • Fill sprayed muffin cups.
  • Bake at 400 deg. for 20-25 minutes.
  • Makes 15 muffins.

  2. Great recipe! We used almond extract instead of the nuts but otherwise followed exactly - was more like a cupcake than a muffin but we loved them. Thanks for sharing!
