DIRECTIONS

  • In a small saucepan over medium heat, cook ketchup, apple juice, fruit spread, vinegar and ginger, stirring constantly until spread has melted and sauce has slightly thickened (about 2-3 minutes).
  • Coat a non-stick skillet with cooking spray or a tablespoon of oil, heat for 1 minute.
  • Add in pork; saute until lightly browned and almost cooked through (about 6 minutes).
  • Reduce heat to medium.
  • Add in peas; cook just until crisp-tender (about 5 minutes).
  • In a bowl, combine the pork mixture, pineapple, water chestnuts and sauce.
  • Add in carrots and toss.
