  • Cook beef in large skillet until brown; drain. Stir in corn, undrained tomatoes, beans. chilies, uncooked macaroni, chili powder, and 1 cup water.
  • Bring to a boil; reduce heat. Simmer, covered, 12 to 15 minutes or until macaroni is tender.
  • Sprinkle with 1/2 cup cheddar cheese, if desired. Cover and let stand 5 minutes.

  1. I just made this yesterday and I too had to add salt and pepper. I did add more ground beef and I also added some left over canned corn to it. Instead of the macaroni, I used mini bow tie pasta (about a half a 1 lb. box). It is great with or without the cheddar cheese. Great comfort food.
     
  2. I followed RAMOK 987 suggestion and used mini bow tie pasta. This is a keeper. I also had to add salt and pepper. This is good with or without cheese. It's even better the next day, if you can believe it. It is yummy. Thanks for posting.

  3. This was a little bland at first so I'm rating before I doctored it up. I added about 1/2 cup of sour cream & about 1/2 cup of cream of chicken soup to give it a creamy sauce, I also added some mexican seasoning (I almost used taco seasoning) & an extra tsp. chili powder. I will keep this recipe but with the added ingredients because in the end it was yummy.
     
  4. This was really good! I did use a whole pound of ground beef and added more chili powder and some salt and pepper. The whole family enjoyed this. Will definitely make again. Thanks for posting!

My name is Sandra Bins. I am from Georgetown, TX. I have 2 sons, ages 5 and 11. I have been married for 4 years but we have been together for 15 years. Most of my cooking I have picked up from my mother and grandmother. They did not cook new things just the same ones over and over. When I got my own place and started to experiment, I learned that I can really make things turn out quite well. I love cookbooks, I don't really have a favorite one, more like a favorite 10. I like to take a recipe and find the variations in other cookbooks and mix things up. My husband, who is from Austin, Texas, likes things spicy and a little wild. But I tend to keep things a little mild. My sons like the fact that there is always something new on the table. We eat as a family every night no matter what. If there is something that my kids don't like, there is always hot pockets....lol. I love to cook mostly on the stove top. I am not a baker, but on occasion I can cook a mean casserole. I try not to depend on casseroles, they are loaded with fat and tend to really heat the house up. For fun my family likes to hike and bike. I am a stay at home mom/assistant cub master. I like what I do but as soon as my youngest starts school I am going back to work.
