Chico Inn Spinach Salad With Creamy Italian Dressing

"This recipe comes from the R.S.V.P. section in a November 1988 issue of Bon Appetit. It was requested from the Chico Hot Springs Lodge and Ranch in Pray, Montana. The dressing is what makes this salad especially good!"

  • Cook bacon in medium skillet until crisp; transfer to paper towels, drain and crumble.
  • Blend mayonnaise, Italian seasoning,garlic and sugar in blender.
  • With machine running, gradually add oil alternately with vinegar in slow steady stream.
  • Gradually add half and half.
  • Toss spinach and onion in large bowl with enough dressing, to taste.
  • Divide between plates, sprinkle with bacon and egg and serve.

  1. I am not quite sure why the Bon Appetit recipe is so different from the Cookbook " A Montana Table" ( Recipes from Chico Hot Springs Resort ). The ingredients from the cookbook for the dressing are way different. For instance 1 1/2 cups half and half, NOT just a couple of tablespoons. I am making the salad from the cookbook as I am writing, I will try both recipes and let you know which one I prefer. I will write the cookbook recipe if I prefer that. Just thought I would let you know the recipes are vastly different.
