Chicken Souvlaki Kabobs

This is excellent served with pita bread, a garlicky tzaziki and a crisp, green salad. The marinade can also be used with veal.

- 2 lbs boneless chicken breasts, cut into 1 1/2 inch cubes

SAUCE
- 1⁄4 cup lemon juice
- 1⁄4 cup olive oil
- 1⁄4 teaspoon salt and pepper
- 1⁄4 cup white vinegar
- 1 clove garlic, minced
- 1⁄2 teaspoon dry mustard
- 1⁄2 teaspoon paprika
- 1⁄4 teaspoon sage
- 1⁄4 teaspoon savory
- 1⁄4 teaspoon thyme
directions
- If using bamboo skewers, soak in water for at least 30 minutes before using.
- Combine all sauce ingredients in a bowl; mix well.
- Stir in chicken cubes; marinade for at least 2 hours before threading on skewers.
- Grill on high heat, lid down.
- Grill for about 4 minutes per side (total 8 minutes) or until the juices run clear.

Wow! This was SO delicious! Some inadvertent modifications I made: I only had smoked paprika, so I used it. I doubled the garlic. Couldn't find savory, so I left it out. Forgot the white vinegar! Left everything else the same, and marinated 4 hours. Cooked on skewers, over propane. WAS SO DELICIOUS!!! Am making again tonite!Reply

Amazing Recipe ! If i can do it everyone can ! I like a lot of flavour yet still found the chicken to be delicious and tender after only marinating for 2 hours as the recipe says. Added just a dash of all purpose seasoning, and a greek mix seasoning, and two cloves of garlic, cooked in the oven just due to weather and it came out great ! Served on pita with tzatziki with seasoned roasted potatoes (which i also dipped in tzatziki) and veggies. Both me and my sister loved it and we dont agree on anything lol !Reply

This recipe is great. I had this dish at the Epcot food and wine festival this year and went crazy looking for a recipe that matched it. This one was as close as it gets. The chicken is moist, tender and delicious! I highly recommend grilling the chicken for the best results. I love to serve with the the Tzatziki, and we use the leftovers for grilled chicken salads. Great marinade. Dont change a thing.Reply
