Chicken Curry (Once a Month Cooking)

"Cooking this Chicken Curry this way is less expensive because groceries are bought in bulk, meals are planned, and nothing is wasted. And it's "from scratch" even if you did pull it out of the freezer! Cook time includes the warm up from the freezer"

  1. I made this as a OAMC recipe and put it in the freezer. We thought this was ok. Not spectacular, just so-so. There was way too much rice for the amount of meat and sauce, and I thought the meat was kind of dry. Probably not one I'll make again, but I'm still trying to figure out which OAMC meals work best for us. Thanks for posting, Tish!

  2. I found this easy to make, but I did make a few changes to suit circumstances. Used raw wing nibbles, cooked in an elec frypan with onion til half done. Mixed the sauce ingredients minus garlic (not fussed on garlic) and poured over chicken, lidded and left to cook for another half an hour. Didn't bother with the brown rice cos we had a potato bake dish to use up. This smelled good, looked appetising and was enjoyed by all. Very kid-friendly as not overly curry flavoured. I mixed the sauce (used dehydrated lemon) and tasted it, before pouring it over, and it seemed just right for us. For an easy afternoon curry with basic ingredients, I am impressed. Thanks Tish. We will definitely positively make this again.

  3. Pretty good but it took a long time to cook. Good for a Sat or Sun dinner, when I have more time. I didn't do the OAMC. That would definately cut down the time next time around. I followed the directions EXACTLY except used ony 1 T Curry powder (kids cant handle spicy stuff), and it was delicious.

I live in Las Vegas. I was lucky enough to run into Recipezaar around Nov. 2000 and got hooked quickly. I am a cookbook collector and have been collecting recipes for as long as I can remember. My DH had to build in shelves for all my cookbooks! I like to dabble with OAMC and for a few years hosted the Budget/OAMC forum with some great people over there. Even though I don't work in the forum any longer I've set up a lot of cookbooks for the purpose of OAMC and stretching food that might be helpful. Please feel free to check them out! I go on food jags and cooking jags! Please come say hi to me and chat on facebook. I currently host a blog for saving money through finding deals and coupons if you are interested. Most of the time I try to cook and have a good dinner on the table but I'll be honest enough to say there is still fast food occasionally in the budget! I have had such wonderful support here whenever I need it. Thank you all for being here! Just a quick note on how I rate recipes: ? 5 stars - This recipe is perfect. (My DH is truly a critic and doesn't give 5's unless it's amazing) I would recommend it to others and would definitely make again. ? 4 stars - This recipe was good but I would change something in it next time. ? 3 stars - This is a recipe I would not make again but it was OK ? 2 stars - This recipe I would not make again and we didn't like it at all ? 1 star - This recipes did not work out/taste was unappealing and wouldn't make again
