- 3 chicken breasts, sliced lengthwise
- cherry jam (or other jam of your choice)
directions
- Arrange thawed chicken in a baking dish and spread jam over the top.
- Bake at 400 degrees for 20 minutes, or until cooked through.
- I served this with steamed broccoli and poppy seed muffins and the kids cleaned their plates.

I live with my husband and two young children in Spokane, WA located in the beautiful Pacific Northwest. We both grew up here and can't imagine a better place to raise our family. If you have never been here before I would highly recommend a visit! There are 100 lakes within a 100 mile radius of Spokane and that means lots of swimming, fishing and water skiing. You can also find miles of hiking and biking trails and numerous beautiful camping grounds. Spokane gets to experience all four seasons: hot, hot summers, cold winters with lots of snow and beautiful and mild springs and autummns. We recently purchased five acres in the area and are preparing to build our dream home. Our daughter has already been promised a horse (she wants a white one) and so I have been reading about how to take care of one.
Besides cooking a few things that I enjoy are flower and vegetable gardening, reading, history, quilting, Tao Bo, yoga, pilates, rubber stamping cards and gifts for friends, cake decorating, cats and horses, and I just learned how to crochet. The name "Mustang Girl" has two meanings for me: My first (and favorite) car when I was 17 years old was a red 1966 Ford Mustang GT. What a fun but not at all practical car. We still have it and have plans to totally restore it someday. And when we finally get horses, we would like to adopt a wild mustang. We both have always liked them, and they make great barrel racing horses! In the future I want to learn how to be a barrel racer, finish learning Spanish and I also have several children's stories and songs I would like to have published someday.
I don't get paid for the work I do but I believe I have the best job in the world! The most challenging and rewarding job in the world is being a stay at home Mom. I wouldn't want to miss watching my daughter, 2 1/2 and my son, 8 months, learn new things everyday and grow up into the adults they will someday be. My husband is a fire fighter in the Spokane Valley and loves his job.
