Cheese & Bran Muffins

"I love incorporating brekky cereals into cooking especially if they're just sitting in the cupboard going stale. This is one using All-Bran courtesy of Kelloggs. These are so versatile too, serve them alongside a main, as a snack or brekky, feel free to add herbs garlic etc too!"

• Ingredients: 8
• Yields: 18 small muffins

ingredients

• 1 cup all-bran cereal
• 90 g tasty cheese, shredded
• 1⁄4 cup sugar
• 1 1⁄4 cups milk
• 1 egg
• 60 g butter, melted
• 1 1⁄4 cups plain flour, sifted
• 3 teaspoons baking powder

directions

1. Combine cereal, cheese, sugar & milk in a bowl. Break in the egg and add melted butter, flour & baking powder (sifted together) and mix well.
2. Fill greased muffin tins 3/4's full and bake at 200.C for approx 10 minutes.
3. Serve buttered.

These taste very strange. I added half the sugar from the recipe but it is still too sweet. I like the idea of cheese and bran though, so I'll try it again without the sugar at all. I like the marble effect it gets because the bran cereal doesn't completely break down.
