- 2 large English cucumbers (peeled, diced 1/2 inch)
- 1 package chavrie fresh goat cheese
- 1⁄2 teaspoon garlic, chopped fine
- 1 tablespoon mint, chopped
- 1 tablespoon dill, chopped
- 1 ounce lemon juice
- salt and pepper
directions
- Drain cucumbers for 10 minutes in a colander.
- Meanwhile combine all remaining ingredients.
- Fold in the drained cucumbers.
- Refrigerate overnight before serving.
