ingredients

• 3⁄4 cup shortening
• 3⁄4 cup brown sugar
• 3⁄4 cup white sugar
• 1 egg
• 1 cup carrot, cooked, mashed and cooled
• 2 cups flour
• 2 teaspoons baking powder
• 1⁄2 teaspoon salt
• 1 teaspoon vanilla
• 1⁄4 - 1⁄2 teaspoon nutmeg
• 1⁄2 teaspoon ground cardamom
• 1⁄2 cup coconut

directions

1. Cream shortening, sugars, add egg and mashed carrots.
2. Sift dry ingredients and add to carrot mixture.
3. Add vanilla, spices, and coconut.
4. Drop on lightly greased cookie sheet. Bake 375 F, 12 to 15 minute.
