carrot bars
- 2 cups sugar
- 1⁄4 cup canola oil
- 4 eggs
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 1⁄2 teaspoons cinnamon
- 2 cups flour
- 2 (6 ounce) jars carrot baby food (3rd foods)

frosting
- 8 ounces cream cheese
- 1⁄4 cup margarine
- 2 teaspoons vanilla
- 2 cups sugar
- powdered sugar

BARS:
- Mix ingredients in order given. Pour into greased jelly roll pan. Bake @ 350 for 20-30 minutes or until toothpick inserted in center comes out clean. Cool before frosting.

FROSTING:
- Soften cream cheese and margarine. Blend with hand mixer and add vanilla. Begin adding powdered sugar, add gradually until frosting is to spreading consistancy. you may need to add more than 2c. Spread over cooled bars.

I live/work on a grain farm of 5500 tillable acres. My husband and I have 4 children, 1 boy 9yr old and 2 boy/1 girl 7yr olds.
I am cooking in a small private school. The only cook for 80 people. Having fun with it, though and the way the kids are eating, I'm doing alright.
My husband is a picky eater which makes it challenging to be creative in the kitchen.
