- 1 (1/4 ounce) envelope unflavored gelatin
- 3 tablespoons cold water
- 2 eggs, separated
- 4 tablespoons sugar
- 2 tablespoons fresh lemon juice
- 1⁄2 tablespoon lemon rind, grated
- 1 1⁄3 cups whipping cream
directions
- Dissole gelatin in water. Let stand 5 minutes.
- Beat egg yolks and sugar until light and fluffy. Add lemon juice and grated lemon rind. Blend carefully.
- Melt gelatin/water mixture over low heat. Add to egg mixture., stirring well.
- Whip cream, fold into egg mixture.
- Beat egg whites until stiff peaks form. Fold into egg mixture.
- Pour mousse into 4 serving bowls.
- Chill for 2 1/2 hours.
