Caribbean Marinade

"Have had this recipe in my files for years - not sure where I found it. The citrus juice in this marinade helps to tenderize pork or chicken."

ingredients

• 2 tablespoons lime juice
• 1 tablespoon vegetable oil
• 1 tablespoon soy sauce
• 2 green onions, chopped
• 2 garlic cloves, minced
• 1 jalapeno pepper, seeded, and finely diced (for more heat leave in the seeds)
• 1⁄2 teaspoon hot pepper sauce
• 1 teaspoon ground allspice
• 1 teaspoon dried thyme
• 1⁄4 teaspoon ground cinnamon
• 1⁄4 teaspoon ground black pepper

directions

1. In a glass jar with a tight fitting lid, combine all ingredients and shake well, until thoroughly mixed. Use as a marinade or basting sauce.
