Butter Tarts - Company's Coming

"Another winning recipe from Company's Coming. The addition of coconut puts a different spin on a classic recipe."

• Serves: 12-24

ingredients

• 1⁄2 cup brown sugar, packed
• 1⁄2 cup corn syrup
• 3 tablespoons butter, softened
• 1 large egg
• 1⁄2 cup raisins
• 2 tablespoons coconut
• 2 tablespoons pecans, chopped
• 1 1⁄2 teaspoons vinegar
• 1 pinch salt
• 12 tart shells, or
• 24 miniature tart shells

directions

1. Preheat oven to 375*.
2. Cream brown sugar, syrup and butter will in a medium bowl.
3. Add next 6 ingredients. Stir well.
4. Divide among tart shells.
5. Bake for 20 minutes or 10-15 minutes in mini shells.
