Broccoli Pie

  • Cut large chunks of broccoli into smaller pieces and discard some of the stems.
  • In a large mixing bowl, combine broccoli, 2/3 of the cheese, and all the onion, and mix well.
  • Spoon into greased 10 inch deepdish pie plate.
  • In the same mixing bowl, mix eggs, and biscuit mix, and beat for several minutes.
  • Add milk, salt, and pepper, and mix until fairly smooth. Pour over broccoli and cheese mixture.
  • Bake uncovered at 350 degrees for 35-40 minutes or until knife inserted in center comes out clean.
  • Top with remaining cheese and bake just until cheese melts.
  • Let stand 5 minutes before slicing to serve.

  1. To make life easier on a week night, I used the recommended frozen broccoli, thawed, and added the stems to my freezer ingredients bag for next time I make my Recipe #135453. I minced the onion - a great insurance against the onion still being that bit crunchy - and added 4 cloves of minced garlic and one leek, finely sliced: a fairly standard additions for me as we love the combined flavour of these three. I used low-fat milk and the Zaar Kitchen Dictionary's substitution for the biscuit mix. It came together well but I felt it needed a lift with some herbs or spices so I added a generous quantity of what's become my favourite herb mix in so many recipes: rosemary and sage from a grinder. We enjoyed this yummy pie with Recipe #327419 for a very tasty dinner. A great way to dress up greens! Thank you for sharing this recipe, weekend cooker. Made for 1-2-3 Hit Wonders.

I used egg substitute in place of the eggs and a reduced amount of fat-free cheddar cheese since there was just the three of us eating... plus I wouldn't have had room in my pie plate for any more cheese! I have a very large pie plate (11 inch I think), although its shallow not a deepdish and she was full to the brim! This makes a large pie and would easily feed 6 as a side... We ate it as a main meal and had plenty of leftovers. I sprinkled cayenne pepper on my slice and DH said it could've used something. All in all this is a very nice broccoli pie. Made for Market tag.
