- 1⁄4 cup chopped onion
- 3⁄4 cup small cauliflower floret
- 3⁄4 cup small broccoli floret
- 1⁄4 cup sliced carrot
- 2 tablespoons butter
- 1 1⁄2 cups milk
- 1⁄2 teaspoon chicken bouillon granule
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 tablespoons all-purpose flour
- 1⁄3 cup cheese
directions
- In a large saucepan, cook the broccoli, onion, cauliflower and carrot in butter for 5 minutes until vegetables are crisp-tender.
- Stir in 1-1/4 cups milk, bouillon, salt and pepper. Bring to a boil.
- Reduce heat; simmer, uncovered, for about 5 minutes or until vegetables are tender, stirring occasionally.
- Combine the flour and remaining milk until smooth; add to saucepan. Bring to a boil; cook and stir for 1-2 minutes or until thickened.
- Reduce heat; add cheese and stir until melted.

A very good soup! The creamy broth and chunky veggies made it much like a chowder. I made this on a Saturday and let it simmer while I was handling the household chores. It was nice to have something warm for lunch. The entire family enjoyed this soup, although I had to double it to feed my hungry teens.
