Bread Machine Cheddar Olive Bread

- 1 cup water
- 3 1⁄4 cups flour
- 1 cup shredded sharp cheddar cheese
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 1⁄4 teaspoons yeast
- 1⁄2 cup small pimento stuffed olive, well drained and patted dry
- Add all ingredients into the bread machine bowl except the olives and yeast.
- Place the yeast in the yeast hopper and add the olives with 10 minutes remaining on the last kneading cycle.
- Walk away!

Initially, I thought there was too little water as the mix was pretty dry and so, I added some water and the mix looked good BUT, when the olives (I used halved Kalamata) it became far too wet and so, I added more flour until the mixture had a good consistency. It turned out amazing: light, fluffy and delicious. I used an aged Cheddar for flavor. So, the moral of the story is to leave the quantity as per the recipe rather than try to fine tune during the process!
