- 1⁄2 cup butter, softened
- 1 cup sugar
- 1⁄2 teaspoon vanilla
- 2 eggs
- 1 cup flour
- 1 teaspoon flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 2 cups blueberries
- 1 teaspoon lemon juice
directions
- Preheat oven to 350 degrees. Spray a 9 in round baking pan with cooking oil and lightly flour.
- Beat the butter, sugar and vanilla until light and fluffy. Add the eggs and beat well. Reduce the speed to low and add 1 cup flour, baking powder and salt; beating until smooth. Pour batter into the baking pan.
- Stir together the blueberries, 1 tsp flour and lemon juice. Spoon berry mixture over batter and bake 50 minutes or until the toothpick comes out clean. Remove and cool for 10 minute Dust cake with powdered sugar and serve.
