Bleu Cheese and Roasted Pecan Salad

"This is a spicy salad made up of apples, pecans and bleu cheese in a balsamic vinegar dressing."

• Serves: 4

ingredients

• 4 cups lettuce (red, butter, romaine etc.)
• 1⁄2 granny smith apple, thinly sliced
• 1⁄4 cup pecans, roasted
• 1⁄4 cup blue cheese
• 1⁄2 cup extra virgin olive oil
• 1⁄4 cup balsamic vinegar
• 3 tablespoons lemon juice
• 1 garlic clove, minced
• 1⁄2 teaspoon hot sauce
• 1⁄8 teaspoon salt
• 1⁄8 teaspoon pepper

directions

1. Place the greens on salad plates.
2. Add the apple slices, then sprinkle pecans and cheese over each.
3. Whisk the remaining ingredients together and sprinkle over salads.

Excellent salad! Simple and quick to put together. I used more lettuce and apples and less than half the dressing.

This recipe made it into our Book #231450. 4/15/08 - Ok, this is one of those recipes where it may not sound like the ingredients go well together, but WOW you when you try it. I tagged this for Photo Tag because I had all the ingredients in the pantry (I used dried minced garlic), and was hungry for a snack. Mary, this is fantastic! :)
