Cake
- 2 cups sugar
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 1⁄3 cups oil
- 3 cups carrots, finely grated
- 4 eggs
- 1⁄2 teaspoon salt

Icing
- 1⁄8 lb margarine
- 8 ounces cream cheese
- 2 teaspoons vanilla
- 1 cup pecans, chopped
directions
- Sift dry ingredients together. In a separate bowl, beat eggs and oil, then add carrots and dry ingredients. Beat.
- Bake at 325 for about 30 minutes in 3, 9 inch round pans.
- Mix icing ingredients together and frost the cake.
